As part of my staycation at Marina Bay Sands, I decided to explore the nearby culinary gems, and Ce La Vi was an obvious choice. We had booked a later slot, but arriving slightly early, we had the opportunity to soak in the atmosphere at the sky bar. The crowd was bustling, but the spectacular night scenery of Singapore’s skyline more than compensated for it.
When our table was finally ready, we were welcomed into an ambiance that left us equally impressed. Ce La Vi is the perfect place for celebrations with family and friends, thanks to its chic and sophisticated decor.

The executive chef’s philosophy, as penned in the menu, set the stage for our culinary journey: “The menu represents my continuous journey to craft and plate the best interpretation of Singapore’s multi-cultural flavors, magnified with a refined touch and using high-quality ingredients that are sourced sustainably.” Intrigued and humbled by these words, we eagerly dived into a menu filled with locally-influenced fusion food.
Ce La Vi’s Spectacular Starters: A Burst of Flavours
For our starters, we decided to indulge in a trio of tantalizing dishes:

(a) Line Caught Red Snapper ($36) – Grilled to perfection, the red snapper was accompanied by a delectable ebi shrimp oil and celeriac coconut puree. A generous pour of laksa sauce infused a local twist into this dish, making it a memorable experience.
(b) Alaskan Halibut ($32) – The halibut arrived with yuzu beurre blanc, leek, kaffir lime leaf oil, and hazelnut. The fish was tender and fresh, while the leek and lime leaf oil added a refreshing complexity to the dish.
(c) Hoshi-Jirushi Risotto ($25) – This vibrant green risotto was a standout, likely thanks to the infusion of spinach juice. The freshness of the vegetables shone through, making it one of the most refreshing risottos I’ve ever had.
(d) Australian Single Lamb Chop ($32) – Served with green curry puree and yogurt, the lamb chop was cooked to perfection. The tenderness of the lamb and the quality of the meat were truly exceptional.
(e) Stony River Black Angus Tenderloin ($46) – The black Angus tenderloin was the pièce de résistance. Cooked to a perfect medium rare, it offered a harmonious balance of flavors, with just the right amount of grill marks.
